Basil and Kale Pestos

Basil pesto finished with pine nuts


Basil Pesto

      • Rinse the basil and pluck the leaves (4 ounces)
      • 2 tablespoons pine nuts
      • 4 ounces basil leaves
      • 3 tablespoons Parmesan
      • 2 cloves of garlic
      • Zest a large lemon
      • Pulse in food processor
      • Half teaspoon salt
      • 5 tablespoons of olive oil

Add olive oil slowly while the food processor is mixing. Zest some lemon on top!



Kale Pesto

      • Place 3 tablespoons of pine nuts into a baking pan and roast in the oven at 350 degrees on convection for 5-7 minutes
      • Place 4 cups of shredded and packed kale into food processor
      • Half cup of Parmesan
      • Half cup of unsalted cashews
      • 2 cloves garlic
      • 1 cup of olive oil poured in slowly while food processor is going.
